We love to eat this over Pecan-Crusted Chicken strips (recipe to come). It would also be a good dipping sauce for spring rolls It's a good combination of sweet and spice. Yum!
Apricot Dipping Sauce

1/4 c. apricot preserves
2 T. fresh lime juice
1 t. minced shallots
1/2 t. grated, peeled fresh ginger
1/4 t. salt
1/8 t. ground red pepper
